For commercial cooking, use the large size Winco ALB-40 Winware Aluminum Brazier 40 Qt. The short straight sides and the wide base allow for browning and braising, or simmering meats and vegetables, over a low flame in small amounts of liquid. Constructed heavyweight aluminum with a 4.0 mm, 3/16" thickness, this pan is highly heat conductive and retains heat well, making it very suitable for these specific cooking needs. This Brazier also features two sturdy aluminum handles riveted to either side, that enable you to comfortably move the pan from place to place. NSF listed and highly durable, this Brazier is excellent for commercial kitchen use.
